Next time, I’ll tack on another day so I can enjoy the city and eat all their incredible food. Next time.
Overall, it was a wonderful weekend with my mom and a few of our friends. Lots of big conversations, discoveries, laughs, tears and deeper connections.

We spent an evening with close friends, drinking wine, sitting outside by their {beautiful} outdoor fireplace, catching up on life and of course, enjoying a delicious meal, including roasted asparagus from the Farmers Market. Unfortunately, I couldn’t experience the Farmers Market, which I heard was incredible. Again, next time.

Eatin’ our greens, even on our so-called vacation. One of my favorites, roasted asparagus. Mmmm!!

Roasted Asparagus Recipe
Ingredients
- Asparagus
- Olive Oil
- Sea Salt
Directions
Preheat 400 degrees F. Use convection is possible.
Wash and trim ends of asparagus. Make sure the asparagus are dry before tossing with olive oil, sprinkle with sea salt – pepper, optional. If they have skinny spears, bake for 5 minutes or 10 if the spears are large – on convection. If it’s not convection, bake 10-12 minutes (skinny) and 15-18 minutes (large).
Remove and enjoy!
Serve with fish, chicken, steak, risotto or a favorite – eat with a fried egg!
