Chocolate Chip & Coconut Cookies {Sandwiches}

A soft, chewy, chocolate chip cookie with a pinch of coconut, all in a single bite!? Yes, please.

It seems as though everything is bite size these days, which I believe is because it contains less guilt and eating two is much more justifiable. There’s a justification for anything, no?

If you have an empty cookie jar, I highly recommend you fill it with these tasty bites, they’re perfect for any age as well as the unexpected neighborhood kids.
This recipe is originally from Two Peas and Their Pod and in my opinion; she’s the cookie queen! Speaking of… during my trip to Salt Lake City this past week, I was fortunate to meet her and her husband. My goodness, I’m not sure I’ve met a nice couple! After taking me to sushi my first night there, they later invited me over for Sunday Football and homemade chili. BTW – If you haven’t seen their beautiful kitchen, go check it out now. I heart my new friends and if you met them, you would too.

For a cookie sandwich, just add a small spoonful of ice cream or cool whip (fat-free = diet friendly) to the flat end of one cookie then with the second cookie press lightly, creating a perfect cookie sandwich. For a frozen treat, toss (not literally) the cookie sandwich into the freezer for a few hours and voila, delish!
