{Special} Popcorn with Nutritional Yeast

My name is Lisa and I’m addicted to popcorn. I always joke that if doctors cut me open, I’d be full of popcorn kernels. Probably not all that funny considering it might be true. I could (& some times do) eat it all day, every day. My mom who’s also a popcorn addict, her and I pinky swore that we would at least have a dinner with nutritional value before we give into our popcorn cravings. I’d say we live up to that promise 88% of the time. I have an air-popper, which is what I grew up with & is my favorite appliance next to my Kitchen Aid.
My best friend, Erin introduced me to her “special popcorn” recipe in college and I’ve been addicted ever since. All legal ingredients, I promise. The special ingredient is nutritional yeast, which we referred to as brewers yeast and that is what makes it so finger licking good! In college we would make huge batches of this, curl up on her sofa and watch chick-flick after chick-flick. To this day every time my husband make a bowl of Erin’s special popcorn, my college memories of us come flooding back. Makes me smile.
Nutritional yeast is being used and talked about much more these days and I have a feeling I’m not the only one sprinkling (i.e. coating) it over the popcorn. It’s makes a healthy snack and the nutritional yeast is a great alternative for butter. It’s hard to describe the taste of this popcorn recipe, but after a few bites you’ll be asking yourself, “how is this so good? I still ask myself that every time I make it. Trust me, after a few bites, you’ll wish you had made a bigger batch.
Have any of you substituted the cheese with nutritional yeast in mac & cheese? I hear that it’s a great substitute for those who can’t do dairy. I may have to look that one up.
Ingredients
Popcorn kernels
Flaxseed oil
salt
Directions
Using an air-popper (or Whirley-Pop), pour in the desired amount of popcorn. Once your kernels have popped, drizzle flaxseed oil over the popcorn, sprinkle the nutritional yeast and then salt. Carefully mix – I use a large spoon. Continue the process; flaxseed oil, nutritional yeast and salt. I usually coat my popcorn, but season you may season to taste. Don’t be alarmed, you might sneeze.
*You can buy nutritional yeast in large and small flakes, which can be found in the bulk section at your local Whole Foods or specialty store.
